The Ingredients 

Quality begins long before the first step of the process—it starts with the ingredients. I place great care in selecting high-quality, fair-trade chocolate and raw materials, choosing partners who share the same respect for both product and people. Working with both Valrhona, Cocoa Barry, and Callebaut chocolate allows me to explore a range of profiles, each bringing its own character, depth, and balance.

From there, craftsmanship takes over. Each recipe is developed with intention, taking the time to refine textures, adjust flavors, and create a harmony that feels complete. Nothing is rushed—every step is given the attention it deserves so that the final result reflects both precision and care.

Seasonality also plays an essential role in my work. I continuously adapt my collections to highlight the best pairings for each time of year and each occasion, allowing the chocolates to feel timely, thoughtful, and aligned with the moment they are meant to accompany.

This approach—rooted in quality ingredients, patience, and craftsmanship—is the foundation of everything I create, and naturally leads into my own journey and the way I came to this craft.

Meet Astrid 

Growing up in France shaped my appreciation for quality. In Paris craftsmanship, quality ingredients, and attention to detail are simply expected. Being raised there gave me my appreciation for carefully crafted products and meaningful flavors. 

I originally got into pastry as a way to recreate the comforting pastries that I was missing from home and couldn’t quite find in Toronto. What started as a practical goal quickly became something more. Through testing, adjusting, and refining recipes, I fell in love with the process itself. I love the balance between precision and intuition, and the satisfaction of turning a few ingredients into something truly special.

After a decade of crafting and executing others’ creations, becoming a mother gave me the push to create something of my own. In 2025 I created Deschamps Patisserie Ltd, turning years of experience and passion into a brand dedicated to refined, small-batch artisan chocolates.
